It is Akaushi from HWD Harwood Premium Beef, raised exclusively for the Harwood group and aged at least 28 days. Most steakhouses buy on the open market; this one controls the herd.
Does Stillwell's have a Michelin star?
Not a star. It has been recommended in the MICHELIN Guide in both 2024 and 2025, which is the Guide including it in its Texas selection rather than awarding a star.

Akaushi Beef Raised for One Restaurant, Seven Floors Above Harwood
Stillwell's is the steakhouse on the seventh floor of Hôtel Swexan, and its argument is the beef. HWD Harwood Premium Beef is Akaushi cattle raised exclusively for the group and aged 28 days or more, which is a supply chain almost no restaurant controls.
Why the Beef Program Is the Whole Story
Most steakhouses buy prime beef on the open market and compete on aging and cooking. Stillwell's owns the animal.

The room is art-deco western, named for the Texas rancher Hallie Stillwell, and it holds one of the larger wine cellars in the city. Food and beverage is led by Raymond Bocanegra, whose résumé runs through the Broadmoor, the Ritz-Carlton Denver, and Rosewood Miramar Beach.
Cowboy Hour runs 4pm to 6pm daily with half-price cocktails, which is the cheapest way to see the room before committing to a full dinner.
