El Carlos Elegante is what happens when Mexico City refinement meets a Dallas wood-fired grill, and the Michelin Guide has recognized it in consecutive years. The hacienda-style room on Riverfront Boulevard is built around an open kitchen where flames take Argentine-style cuts and a stone fireplace does the rest.

This is not the quiet anniversary dinner. This is the dinner where you order the mezcal Negroni, share the pork al pastor with house-made masa, and reconsider what you assumed about Mexican fine dining.
The menu walks between refined and primal with real confidence. El Machete, a blue corn quesadilla with rotating fillings, has earned a following. The dark, rich mole with roast chicken is a close-your-eyes dish. Crudo and ceviche keep it bright, and the Tijuana Caesar with chorizo and poblano dressing rewrites what a salad is for.
