Strouderosa is a pit barbecue joint in Lake Highlands, in Dallas proper rather than out in the suburbs, and it keeps barbecue hours: Wednesday through Sunday, with the pit closing at 8pm most nights and 5pm on Sunday. The hand-drawn jalapeño on the logo was drawn by the founder's father.

The Exchange Club of Lake Highlands runs the festival a short drive from the restaurant's Skillman Street pit, so the brisket barely needs a passport. Barbecue Hours Are the Whole Plan

The single most common way to miss good Texas barbecue is turning up on the wrong day. Strouderosa closes Monday and Tuesday, and Sunday wraps at 5pm, so a barbecue dinner is a Wednesday-to-Saturday plan.

The name honors Don Stroud, the founder's father, and the concept grew out of making salsa with him in the early 2000s. The menu runs on beef brisket, baby back ribs and jalapeño cheddar sausage, and the brisket turns up again in the queso, the nachos, the tacos and the enchiladas, which is a more interesting order than the standard three-meat plate.

It is a strip-center suite on Skillman Street, and the surprise is behind the door: a proper dining room with long wooden tables, built for sliding a tray down to whoever ordered the ribs. Dallas Observer readers voted it Best Barbecue Restaurant in the 2023 Best of Dallas, and the plaque is on the wall to prove it.
